Vitality Rice & Vegetables

  • 1 x 300g packet Uncle Ben's® White Rice, cooked
  • 1 tablespoon olive oil
  • 1 leek, finely sliced
  • 1 tablespoon butter
  • 2 cups vegetables, thinly sliced (i.e. celery, mushrooms, capsicum, onion, broccoli, carrot)
  • ½ cup water
  • 1 tablespoon Tamari or soy sauce

Cooking Instructions

  1. Heat oil and butter in a non-stick frying pan. Add leeks and cook for 3 minutes over medium heat.
  2. Place vegetables and water in a covered microwave safe container and cook on HIGH in microwave for 3 minutes.
  3. Drain the vegetables and add to the leeks. Mix in rice and tamari sauce.
