Spicy Chicken & Rice

- 1 x 250g packet Uncle Ben's® Express Special Fried Rice
- 2 tbsp olive oil
- 250g chicken thigh fillets, sliced
- 1 onion, thinly sliced
- 1 red chilli, finely chopped
- 1 tbsp ground cumin
- 2 cloves garlic, crushed
- 1 red capsicum, thinly sliced
- 2 tbsp sour cream

- Heat oil in a non-stick frying pan and add chicken and cook over high heat for 3 minutes.
- Add onion, chilli, cumin and garlic and cook for 1 minute. Add capsicum and cook a further 2 minutes over medium heat.
- Stir through sour cream and serve with rice heated to directions on packet.
