Express Curried Chicken

- 1 x 300g packet Uncle Ben's® White Rice, cooked
- 1 chopped onion
- 2 finely sliced breast fillets of chicken
- 1 dessertspoon of curry powder
- 1 small tin (165ml) of coconut cream
- Salt & pepper to taste

- Stir-fry the ingredients on high heat for 2 minutes in a little oil.
- Add 1 small tin (165ml) of coconut cream – stir to combine.
- Simmer for a further 2 minutes then serve with 1 x 250g packet of cooked Uncle Ben's White Rice.
