Eggplant & Bean Combo

Ingredients

  • 1 x 300g packet Uncle Ben's® White Rice
  • 1 tablespoon olive oil
  • 1 large eggplant, cubed
  • 1 tablespoon Moroccan seasoning
  • 125g tin red kidney beans, rinsed and drained
  • 2 tablespoons tomato sauce
  • 2 cups English spinach, chopped

Cooking Instructions

  1. Heat oil in a non-stick frying pan. Add eggplant and cook over high heat for 2 minutes.
  2. Add seasoning, kidney beans and tomato sauce. Mix through spinach and cook for 2 minutes.
  3. Heat rice to directions on packet and serve with eggplant mixture.
